INGREDIENTS

  • 6 Large Eggs
  • 1 Avocado (halved, pitted, and peeled)
  • 2 Tbsp Cilantro (chopped)
  • 2 Tbsp Chives (chopped)
  • 2 tsp Freshly Squeezed Lime Juice
  • Pinch of Garlic Powder
  • Salt & Pepper (to taste)
  • Smoked Paprika, Cracked Black Pepper, or Everything Seasoning (for garnish)

DIRECTIONS

TO PREPARE EGGS:
  • Place eggs in a large saucepan (with a lid) and cover with cold water by 1 inch. Bring to a boil over medium-high heat and cook for 1 minute.
  • Cover eggs with a tight-fitting lid and remove from heat; set aside for 8-10 minutes to continue cooking.
  • Place eggs in a bowl and fill with cold water. Add ice and allow to cool enough to handle.
  • Drain well and let cool before peeling and cutting the eggs in half lengthwise, reserving the yolks.
TO PREPARE FILLING:
  • In a medium bowl, mash the yolks and avocado with a fork until well-combined.
  • Stir in cilantro, lime juice, chives, and garlic powder.
  • Season with salt & pepper to taste.
TO ASSEMBLE:
  • In a medium bowl, mash the volks and avocado with a fork until well-combined.
