INGREDIENTS
- 6 Large Eggs
- 1 Avocado (halved, pitted, and peeled)
- 2 Tbsp Cilantro (chopped)
- 2 Tbsp Chives (chopped)
- 2 tsp Freshly Squeezed Lime Juice
- Pinch of Garlic Powder
- Salt & Pepper (to taste)
- Smoked Paprika, Cracked Black Pepper, or Everything Seasoning (for garnish)
DIRECTIONS
TO PREPARE EGGS:
- Place eggs in a large saucepan (with a lid) and cover with cold water by 1 inch. Bring to a boil over medium-high heat and cook for 1 minute.
- Cover eggs with a tight-fitting lid and remove from heat; set aside for 8-10 minutes to continue cooking.
- Place eggs in a bowl and fill with cold water. Add ice and allow to cool enough to handle.
- Drain well and let cool before peeling and cutting the eggs in half lengthwise, reserving the yolks.
TO PREPARE FILLING:
- In a medium bowl, mash the yolks and avocado with a fork until well-combined.
- Stir in cilantro, lime juice, chives, and garlic powder.
- Season with salt & pepper to taste.
