INGREDIENTS
- 1 Cup Cottage Cheese (Use fat-free to cut the fat content)
- 2 Large Eggs
- 1 Cup Rolled Oats
- 2 tsp Cinnamon
- 2 tsp Baking Powder
- 2 tsp Vanilla Extract
DIRECTIONS
PREPARATION
- Add all ingredients to a blender in the order listed and blend until smooth, about 30 seconds. Make sure not to over-blend.
- Let the mixture sit for 5 minutes until it thickens.
COOKING INSTRUCTIONS:
- Heat up a large nonstick skillet over low to medium heat. Once hot, add oil or cooking spray.
- Using a 1/4 cup as a scoop, pour batter into equal-sized pancakes.
- Cook for 3-4 minutes until small bubbles start to form on the outside and the sides start to fluff up.
- Flip and cook another 2-4 minutes until golden brown.
