INGREDIENTS
- 3 Cups Cooked Chicken (chopped or shredded)
- 2 Stalks Celery (diced)
- 1/2 Cup Thinly Sliced Almonds
- 3 Green Onions (sliced)
- 2 Tbsp Parsley (finely chopped)
- 3/4 Cup Plain Greek Yogurt
- 1 Tbsp Dijon Mustard
- 3 Tbsp Fresh Lemon Juice
- 1/2 tsp Celery Seed
- Salt & Pepper (to taste)
DIRECTIONS
PREPARATION STEPS:
- In a large bowl, mix together chicken, celery, almonds, green onions, and parsley.
DRESSING AND ASSEMBLY:
- In a separate bowl, whisk together Greek yogurt, Dijon mustard, lemon juice, celery seed, and salt/pepper.
- Add the dressing to the chicken mixture and mix well until combined.
- Cover and store in the refrigerator until ready to serve. Serve on lettuce boats, your favorite low-carb wrap, or on a salad!
