INGREDIENTS
- 3 Medium Zucchini
- 1 Cup Part-Skim Ricotta
- 1 Cup Mozzarella Cheese
- 1/3 Cup Parmesan Cheese
- 1 Cup Sugar-Free Marinara Sauce
- 1 tsp Salt
- 1 tsp Pepper
- 1 tsp Onion Powder
- 1 tsp Onion Powder
DIRECTIONS
PREPARATION STEPS:
- Slice zucchini into long slices about 1/8 inch thick.
- Lay zucchini slices flat in a single layer onto a baking sheet. Sprinkle each side with 1/4 teaspoon salt. Bake at 350°F for 10 minutes. Let cool.
ASSEMBLY AND COOKING:
- Combine ricotta, 1/2 cup mozzarella, 1/3 cup parmesan, and seasonings in a bowl.
- Spread a small amount of marinara in the bottom of an 8 x 8 baking dish.
- Once zucchini has cooled, place a spoonful of the cheese mixture on the edge of each zucchini slice and roll it up. Place in the baking dish.
- Pour remaining marinara over zucchini rolls and sprinkle with the remaining mozzarella. Bake for 30 minutes at 350°F.
